To the aim to improve the qualitative and quantitative aspects of the production, today, techniques of breeding to the vanguard are adopted, also resorting to interspecific interbreed. The objective of the present work is that to supply, on the base of analytical parameters, a panoramic of the peculiarities of bison meat such concurring a correct merchandise appraisal. It comes moreover evidenced as the bison it can acquire a perspective importance of meaningful market.
