Two consecutive experiments were performed on 150 male muscovy ducklings in order to evaluate the effects of 3 mg/kg of Clenbuterol supplemented in the diet. In experiment 1 one group of birds (group A) administered for 16 days has a withdrawal period of 3 days, another (Group B) received the Beta-agonist for 19 days till the day of slaughtering and a third (Group C) served as control. In experiment 2, birds of Group A had a longer withdrawal period (9 days) and birds of Group B received Clenbuterol for 25 days. The results of investigation indicate a positive effect of clenbuterol on carcass and breast muscle weight of ducks continuously administered the Beta-agonist. Treated animals showed a light colour of the meat and an higher protein content of breast muscle. The total collagen analysis showed a lower content in meat of duck of Group B; this result, however, does not mean a greater tenderness, because shear force values are unaffected by the substance. The detection of residues of Clenbuterol has been performed on serum, bile, liver, and breast muscle in experiment 1 and only in liver and breast muscle in experiment 2. The ELISA test has given different results depending on the substrate and the withdrawal period. Liver has been - as expected the preferential target for tghe accumulation, while in muscle the presence of the residue seems to be related to the length both of the treatment and of the withdrawal period.
