The excellence is an adjective that indicates the qualitative achievement of high levels, of a great appreciation from the consumers, the wine critics and the press notoriety. Therefore by means of the conquest of a series of consents that attests a variety of positive judgments of the experts, which also brings to increase the consumers’ expectations. The characteristics of the excellence are attained by solid productive, trade and communication bases which re¬call the expressed multiple concept of the terroir including the potentialities and the peculiarities of a territory. The meaning of the term terroir and its evolution in the actual economic and commercial context are resumed. Zoning approach is considered a tool to understand better a terroir. Several studies carried out in Tuscan regarding the ‘Sangiovese’ variety are synthetically reviewed according soil, climate, vineyard technical characteristics, factors able to influence the behaviour of the ‘Sangiovese’ on some representative areas of famous Denominations of Origin. The qualitative excellence of some prestigious Tuscan wines depends on several factors, including the contribution of research for the terroir definition, the soil studies, the choice of genetic material (the clone selection and the strategy of use selected clones), the model of vineyard plantation and the physiological knowledge to drive the management of the vineyard and the cellar. In Tuscany there are many terroirs, more than the most famous Denomination DOCG currently existing (‘Brunello di Montalcino’, Bolgheri, ‘Carmignano’, ‘Chianti’, ‘Chianti Classico’, ‘Morellino di Scansano’, ‘Montecucco’ and ‘Nobile di Montepulciano’,) and a series of emergent DOC located mainly in the in Tuscan Coast line.
