Food systems in peripheral areas in the face of global dynamics. The case of Tuscia Viterbese. This work contributes to the debate on the North/South dialectic in global food systems, with a focus on the evolution of agrifood systems located in peripheral areas and on the processes of territorial transformation. In the face of globalization, differentiated responses from local systems emerge. Such responses include specialization and intensification dynamics as well as alternative development models oriented towards sustainability and quality of products. The paper takes into consideration the case study of Tuscia Viterbese, an area in Central Italy characterized by a specific typical production, that of hazelnut, which has experienced a strong expansion in recent years. In the case analysis, the impact of some factors is explored in depth, such as that of practices implemented by the various actors and local food policies, with their connections with territorial development strategies.
