A preliminary trial was performed to test the effect of oleuropeine, contained in dry extract of olive leaves, on the oxidative stability of rabbit meat. Forty-two crossbred rabbits were fed with three diets; control diet = 25 mg alpha-tocopheryl acetate/kg feed, vitamine E diet = 200 mg alpha-tocopheryl-acetate/kg feed, oleuropeine diet = 25 mg alpha-tocopheryl-acetate + 200 mg oleuropeine/kg feed. Live weights, daily wight gain and feed to gain ratio were not influenced by dietary treatment. Meat samples from hind leg of oleuropeine group displayed the highest TBARS value.
