In this work, we characterized and compared the aromatic profiles of grapes throughout the development of the berries of four aromatic varieties, which were cultivated in the same vineyard and same agricultural conditions. Similarities and differences between cultivars were highlighted above all by evaluating the monoterpene composition, both in the free and glycosylated forms. The aim was to gain some details about the biosynthetic dynamics of the four varieties and to obtain useful information in order to better manage the grape aroma composition in the vineyard. The analysis of the trends and ratios among single monoterpenes throughout the berry development suggested the involvement of the same or different enzymes in various steps of the related pathways.
