Abstract

food safety incidents associated with food contaminants are a serious health threat in developing and developed countries; because of this implication with public health and international trade, food safety has emerged as a significant global issue. Controller and producers have to deal with consumers’ demand of a safe food and are constantly looking for new solutions and new tools able to ensure the safety of the global food supply. This is a challenge for the Industry 4.0, which is changing the management of the food chain, from farm to table. Smart technologies can be applied to the food safety management as a preventive approach towards identifying, preventing, and reducing food-borne hazards. Within the objectives of the Food Industry 4.0 a software (Safeaty check management, SCM) has been developed as an improvement tool for the creation and the management of the company's food safety systems. SCM is based on Prerequisites ( PRP) from ISO 22000 and on areas’ risk level; the platform is scalable and through the use of the cloud allows the centralized management of several production sites and the connection of numerous and different devices with personalized access to information according to the different tasks of the operators. In addition, the system can be integrated with a smart label technology able to trace and ensure the compliance with the cold chain.
