The evolution of new professional competencies in some agrifood and agritourism activities in Tuscany, Italy, is analysed. The first part of the paper discusses the weaknesses and strengths of the methodology used in the analysis. The second part presents the empirical results that indicate an emerging demand for professionalism. Three levels of training interventions are also identified: retraining; updating/improvement; and specialization.
