Three groups of Saanen goats of different parity have been controlled about milk production and mean qualitative parameters. Milk production and SCC content increased according to proceed of parity (p <0.05). The nutritional characteristics resulted better in the primiparous than in the others groups, in fact primiparous produced higher value of protein in milk.. The technological parameters resulted similar in the three groups, characterised by a good rennet clotting time, but with a low capacity of curdling hard.
